Baked Apple Oatmeal

Whether for breakfast or a dessert, baked apple oatmeal is delicious and satisfying! Get your toddler to help mix and pour, and they’ll be sure to gobble it up. Best served warm from the oven.

1 cup diced apple (something sweet and crunchy, like Red Prince, Spartan or Cortland)
1 cup large flaked rolled oats
2 tbsp hemp seeds
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp salt
1/4 cup unsweetened apple sauce
1/4 cup maple syrup
1 tsp vanilla
1 tbsp melted vegan butter

Preheat oven to 350. In a medium bowl, combine apple, oats, hemp seeds, baking soda and spices. In a separate bowl, mix the remaining ingredients together. Once mixed well, pour over the apple mixture and stir. Equally divide among 4 greased ramekins for individual servings. Bake for 35 minutes or until dry on top and slightly risen.
