Homemade Granola

Granola is tasty, healthy, but in the grocery stores, it can be oh-so-expensive! My heart always stops for a second when I reach for a teeny-tiny $10 bag of granola in the stores, especially since I know I can easily make it at home for a fraction of the cost. This granola recipe is easy, cost-effective and toddler approved!

This recipe make a BIG batch that will last you a couple of weeks. But, you’ll need about an hour and a half to make it, so do it when you have time. You can play around with the ingredient list based on what you have at home, but this is generally what we like to put in our granola. Be sure that you chop or blend nuts as they can be a choking hazard for young granola aficionados. What we discovered with our nut-blending turned out to be a happy accident — I over-bleneded my nuts in my sat granola batch, and ended up making teeny balls of nuts butter, which really added to the taste and texture of our granola!

Preheat your oven to 275.

Ingredients:

6 cups rolled oats
1 cup pumpkin seeds
1 cup cashews (blended)
1 cup peanuts (blended)
1 cup sliced and chopped almonds
1/2 cup hemp seeds
1/4 cup chia or ground flax seeds (or both!)
1 cup sesame seeds
1/2 cup unsweetened coconut flakes

Mix the above ingredients together in a large roasting pan.

Then, in a small pot over medium heat on the stove, melt together:
1/2 cup maple syrup
1/2 tsp salt
1/2 tsp vanilla
3/4 cup coconut oil

Once mixed, pour the melted mixture over the dry mixture and stir thoroughly until all ingredients are coated evenly.

Bake in the oven for one hour, stopping every 15 minutes to stir the granola. Then, raise the heat to 350 and bak for another 15 minutes to get that good granola crunch.

Enjoy with almond milk and fresh fruit for a filling and yummy breakfast!

As a special treat, grab a scoop of the granola when it’s fresh out of the oven and mix with a handful of vegan semi-sweet chocolate chips. The chocolate will melt and you’ll be in heaven!
