When our daughter figured out people in her extended family all have different names, she was able to start addressing people to get their attention. Some names took her a little longer to pronounce properly, but she was able to substitute it with some variation. Well, one of her grandfathers decided he wanted to be called “Grumpy” (even though he’s not all that grumpy at all! 🙂 ), but Chloe just couldn’t say it. So, she decided to name him something she could say: Da. Da has made many things with Chloe and for Chloe, and one of her favourite Da dishes is his kale soup. The vitamin A and vitamin C in kale is off the charts, and it’s rich in iron, calcium, magnesium and vitamin B6 too. I have to say, this soup tastes really good, and again, is very easy to make.
Ingredients
1 bunch kale
1 small onion, chopped
3-4 medium potatoes
1 litre vegetable broth
1 tsp curry powder
Salt and pepper to taste
1 tsp olive oil
Instructions
Boil kale and potatoes separately, until cooked.
In a saucepan, brown onion in olive oil.
Add ingredients to blender, and blend until smooth. Add some of the water from the boiled kale to the soup to keep all the good nutrients in your soup.
